Millie’s will open in Mancos, Colorado this Spring! Everyone cross your fingers for April!

In the meantime, we’re excited to offer catering and work with you on a menu that fits your preferred palette and budget. Here are a few of the menus we’ve recently put together for our guests.


Thai-Inspired Menu | Surprise Birthday Party Catering for 10 Guests at a Private Residence

The Menu:

  • Larb (also known as laap), a spicy minced meat salad with fresh herbs, lime juice, fish sauce and more. We like it spicy!

  • Khao Niao (traditional Thai sticky rice) with Thai Pepper Steak

  • Pad Thai with chicken, shrimp, tamarind, rice noodles

  • Not pictured: Amarillo Aji Pork Tenderloin

This menu was completely gluten free and full of flavor.


Classic Lunch Buffet for 40+ Guests | Mesa Verde National Park Volunteer Appreciation Lunch at the Mancos Community Center

The Menu:

  • Mixed green salad served with homemade balasamic or ranch dressing

  • Creamy Chicken Marsala over penne

  • Ratatouille (on the right) and gluten free pasta with homemade marinara (on the left). These were our options for vegetarians, vegans, and dairy-free guests

  • Not pictured: buttered, roasted garlic bread & sweet potato pie for dessert

This menu was traditional, hearty, and offered classics guests hadn’t seen in quite a while.


An Abundance of Appetizers | Catering for a Company Holiday Party

The Menu:

  • Cucumber bites with smoked salmon and dill cream

  • Stuffed mushrooms (vegetarian or non-vegetarian were available)

  • Trio of spreads: hummus, tzatziki, and olive tapanade with pita points, artisan crackers, and vegetable crudite

  • Pork dumplings (aka Jake’s delicious pot stickers) with a homemade chile soy dipping sauce

  • Bacon wrapped shrimp skewers
